Homemade Wholegrain Bread

Ingredients

6 c. water-4 c. hot and 2 c. warm
1 c. wheat bran
1 c. corn meal
1 c. oat bran
4 Tbls butter
2 Tbls salt
2 Tbls molasses
1 1/2 Tbls yeast
2 eggs
9-10 c. whole wheat flour (may vary with weather conditions. Start with 9 degrees C. and add as much as necessary to achieve desired consistency)

Directions

Stir together in a mixing bowl: four cups hot water with wheat bran, oat bran, corn meal, butter, and salt. Let stand until a finger can be placed into the mixture comfortably.

In a separate bowl: Sprinkle yeast on 2 cups of warm water and add molasses and egg mixture. Pour molasses, egg, and yeast mixture into mixing bowl with the brans, corn meal, butter, and salt. Add enough wheat flour to make dough the consistency of cake batter. Beat with electric beater on medium speed for three minutes using a bread hook. Continue to add whole wheat flour. Once you have achieved a consistency that allows the bread mixture to turn in the mixing bowl leaving the sides of the bowl clean, pour the mixture onto a clean counter and kneed by hand for a full 10 minutes. Lightly cover top of mixture with olive oil and cover with plastic wrap. Let rise until double in size. Then place into bread pans to rise again until double.

Bake at 375 for 20-25 minutes until done. Makes five medium loaves.
