Blue Corn Crusted Salmon

Ingredients

2 each Salmon, 8 oz. cut crosswise into 1 1/4 oz. portions
4 each blue corn tortillas, chopped fine, in robo coupe
2 tsp. olive oil
Dash kosher salt
Dash white pepper

Directions

Preheat oven to 400 F.

Brush salmon with oil.  Season lightly with salt and pepper.  Dip in blue corn powder.  Place corn side down on flat cooking surface.
