Spinach Salad

Ingredients

1/2 to 3/4 lb. fresh spinach, stemmed, washed, and dried
4 large fresh mushrooms, cleaned, trimmed, and sliced
3 to 4 green onions, sliced
1/4 cup roasted soybeans

OPTONAL INGREDIENTS:
1/2 cup cooked chick peas
1/2 cup cooked brown rice
4 tomatoes, cut in wedges
1/2 cup sprouts (alfalfa, mung bean, lentil)
1 to 2 hard boiled eggs, sliced

Directions

Combine the spinach, mushrooms, green onions, soybeans and any other ingredients you wish to add in a large bowl.  Just before serving, add the dressing of your choice and toss together well.
