Lemon Fennel Sauce

Ingredients
1/4 cup julienne fresh fennel
1 tsp chopped shallots
1 tsp olive oil
2 tsp lemon juice
1/2 cup chicken broth/vegetable broth blended with 2 tsp of cornstarch
1 Tbls butter
2 tsp chopped fresh parsley
Directions
Add fennel. Saute for 2 minutes until translucent. Add lemon juice. Add broth mixture. Bring to boil until it thickens, stirring frequently using a wire wisk. Add butter, whipping it into the mixture. Add salt and pepper to taste. Add parsley before serving.
