Pureed Minted Peas

Ingredients
12 ozs frozen peas thawed
1/2 cup whipping cream
1 tsp chopped fresh mint, salt and pepper as desired
2 tsp cornstarch mixed with 1/4 cup vegetable broth
Directions
Combine ingredients leaving out the cornstarch and broth. Place in food processor and blend until smooth. Remove, place puree mixture in a sauce pan and bring to a slow simmer. Add the cornstarch and broth. Stir until thickened (should be the consistency of mashed potatoes). Remove from heat.
