Red Lentils - Side Dish

Red Lentils

Serves: 4

Ingredients

3/4 cup red lentils
1/4 cup chopped onions
1/2 tsp fresh chopped garlic
2 Tbls olive oil
2 tsp paprika
1/2 tsp chili powder
1/2 tsp coriander (powder)
2 cups vegetarian broth or chicken broth

Directions

In a heated pan, add olive oil, onions and garlic then saute until transparent.  Add lentils and seasonings, then saute for one minute.  Add broth, bring to boil, reduce heat.  Cover and simmer for 20 minutes or until lentils are tender.  Drain.  Place in a container and season w/salt and pepper.  Keep hot until ready to serve.
