Pan Roasted Halibut

Ingredients

4-5oz halibut fillets
2 Tbls olive oil
1/2 cup vegetable broth/chicken broth

Directions

Heat a saute pan using 2 Tbls olive oil.  Season fish fillets with pepper and fresh thyme.  Pan sear fish with flesh side down first.  Do each side for two minutes.  Finish fish in oven adding a sprinkle of lemon juice and a 1/2 cup vegetable broth/chicken broth.  Roast in oven for 20 minutes at 325 degrees or internal temperature of 145 degrees.  Remove, keep warm until ready to serve.
