Vegetarian Quiche

Ingredients

1/2 lb tofu
1/8 tsp garlic powder
1 tsp salt
1 tsp basil
1/2 cup water
1/2 cup cashews, ground finely
2 Tbls corn starch
*Blend all ingredients in blender or food processor until smooth.

Add:
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1/2 cup chopped yellow onion
1/2 cup diced carrots
1/2 cup sliced olives

Directions

Add the vegetables to the creamy mixture.  Mix gently and pour into an unbaked pie shell.  Bake at 350 degrees for 35 minutes.
