Ingredients
2 c canned vegetable stock
1 c bulgur (a quick-cooking form of whole wheat)
1 c cucumber, peeled, seeded, and chopped
3/4 c chopped green onions
2 tomatoes, seeded
1/2 c chopped fresh parsley
1/4 c chopped fresh mint
3 Tbls. fresh lemon juice
2 Tbls. olive oil
1 pinch of salt
Directions
Boil vegetable stock in medium saucepan. Pour boiling vegetable stock over bulgur in large glass bowl. Cover; let stand 25 minutes to an hour. Mix in cucumber, green onions, tomato, parsley, and mint. In small bowl, whisk together lemon juice, olive oil, and salt; pour over bulgur-vegetable mixture. Toss until well combined; refrigerate.
*Add one cup of chickpeas to salad to increase protein content.
