Glorious Morning Muffins

Ingredients

1 c. crushed bran flakes
1 c. unbleached white flour
1/2 c. whole wheat flour
1/3 c. packed brown sugar
1/2 tsp baking soda
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1-1/2 c. grated carrots
1 c. raisins
1/2 c. chopped walnuts
1-1/4 c. skim milk
1 egg, beaten
3 Tbls canola oil

 

Directions

Heat oven to 400 degrees.

Spray muffin tin with nonstick spray or use paper muffin cups. In a large bowl, combine the dry ingredients. Make a well in the center and add the first three liquid ingredients. Blend together for 50 strokes. Batter should still be lumpy. Gently stir in carrots, raisins and walnuts. Divide batter among cups. Bake for 25-30 minutes, or until the center is done.
