Tofu Egg Salad

Ingredients
12 oz tofu (squeeze in cheesecloth to remove excess water)
2 hard-boiled eggs, chopped
2 Tbls canola oil
2 Tbls lemon juice
1/2 tsp salt
2 Tbls minced onion
1/4 cup chopped celery
Directions
Combine the first ingredients in a blender and puree for 30 seconds. Fold in onion and celery. Mix well. Serve as a sandwich spread on whole grain toast.
