Low-fat Hummus - Appetizer

Low-fat Hummus

Ingredients

Juice of 2 large lemons (3 Tbls)
1/2 tsp cumin
Pinch cayenne pepper
1/2 tsp salt
2 cloves garlic, chopped
1/2 tsp olive oil
1-20 oz. can chick peas, drained but reserve liquid
3 Tbls sesame seeds, toasted (optional)
1/2 cup chopped parsley (optional)

Directions

Blend lemon juice, seasonings, garlic, oil and 3 tablespoons of chick pea liquid in food processor or blender. Add chick peas and puree. Add more chick pea liquid if needed for blending. Scoop into bowl and add optional ingredients, if desired. Refrigerate several hours before serving. Garnish with paprika, parsley or onions.
