Tasty Brown Rice

Ingredients
1 tablespoon olive oil
1/2 cup finely chopped onion
1/2 teaspoon minced garlic
1 (16-ounce) package assorted veggies (broccoli, carrot, and snow peas), about 8 cups
1 cup brown rice
1/2 cup diced tomato
1 bay leaf
1 3/4 cups canned fat-free chicken broth
1/2 cup water
3 tablespoons grated parmesan cheese
Directions
In a large pot, heat olive oil and saute' the onion, garlic and assorted veggies over medium heat, stirring until tender. Add the rice, tomato, bay leaf, broth and water. Stir until well mixed. Cover and bring to a boil. Reduce heat and cook until rice is done, about 20 to 30 minutes. Remove bay leaf. Stir in cheese.
