Artichoke squares

Ingredients
1 cup chopped green onions (Scallions)
1 teaspoon minced garlic
2 cups sliced mushrooms
1 (2-ounce) jar diced pimentos, drained
2 (14-ounce) cans artichoke hearts, drained and chopped
¼ cup chopped parsley
½ teaspoon dried oregano leaves
2 large eggs
3 large egg whites
¾ cup Italian bread crumbs
1 cup shredded reduce-fat Swiss cheese
1 cup shredded reduced-fat cheddar cheese
Salt and pepper to taste.
Directions
Preheat oven to 350 degrees. In pan coated with nonstick cooking spray, sauté onion, garlic, and mushrooms until tender. In a bowl, combine onion mixture, pimentos, artichoke hearts, parsley, oregano, egg, egg whites, bread crumbs, cheeses, salt and pepper, mixing well. Put into a 13X9X2-inch baking dish coated with nonstick cooking spray and bake for 30 minutes or until mixture is set. Cut into squares.
