Loaded Potatoes

Ingredients
1(32-ounce) bag frozen hash brown potatoes
2 large eggs
3 large egg whites
2 cups skim milk
4 tablespoons margarine, melted
Salt and pepper to taste
½ teaspoons onion powder
2 cups shredded reduced-fat Cheddar cheese
½ cup nonfat plain yogurt
½ cup salsa, optional
Directions
Preheat oven to 350 degrees. Place the potatoes in a 1 1/2 –quart shallow baking dish coated with nonstick cooking spray. Bake for 15 minutes. Meanwhile, combine the eggs, egg whites, milk, margarine, salt and pepper, and onion powder. Remove the potatoes from the oven. Sprinkle with the Cheddar cheese, tossing toss with a fork to mix. Pour the milk mixture over the potatoes. Return to the oven and bake for 30 to 40 minutes longer or until the potatoes are light brown and firm to touch. Serve with salsa.
