Meat Loaf

Ingredients

1 ½ pounds ground sirloin
2 large egg whites
1 carrot, shredded (about ½ cup)
1 teaspoon dried oregano leaves
1 teaspoon dried basil leaves
Salt and pepper to taste
½ cup old-fashioned oatmeal
1 cup tomato juice
1/3 cup chili sauce

Directions

Preheat oven to 350 degrees. Mix together ground sirloin, egg whites, carrot, oregano, basil, and salt and pepper. In a small bowl, mix together oatmeal and tomato juice, let sit for 5 minutes and combine with meat mixture. Transfer to a 9X5X3-inch loaf pan and bake for 40 minutes. Remove from oven for 20 minutes longer. Drain any excess grease.
